The Expertise

We are proud to introduce our new head Chef, Justin Paakkunainen! While boasting an impressive 20 plus years in the kitchen, our Chef brings a consistently refreshing new menu to our guests. Driven by an unwavering passion for the art of cooking, and a constant desire to grow in his craft, Chef Justin is always searching for new ways to breach the barriers of our guests expectations for palate pleasing, illustrious meals.

 

Chef Justin has personally taken care to build his brigade de cuisine to help create a positive team environment, allowing us to reach our team goal of providing guests with the best possible experience. This starts with our Sous Chef, Ian Miller, who like Chef Justin, is young and driven by his passion to constantly grow and learn.


To continue in our desires to inspire and exceed the expectations of our guests, Chef Justin is excited to include big game in our menu. The inspiration behind this addition is to further enhance the unique, rustic atmosphere that the Fraser River Lodge provides, allowing our guests to leave definitively touched by nature.


Farm to table 

We take particular pride in supporting local farmers, and businesses by sourcing our foods locally, or as we like to say "farm-to-table." We also go to great lengths to purchase our seafood locally, ensuring that we provide the highest quality and freshness of the ingredients in our guests' dishes.


Majority of our herbs are from our own beautiful herb garden, as well as the eggs laid fresh from our chickens,  in order to guarantee the freshest flavors to stimulate your taste buds. You can expect only the best quality food here. 


We are delighted to offer a unique ecological dining experience while still being destination dining in one of the most spectacular settings with breathtaking views and privacy.
